Creamy Date and Pecan Overnight Oats

I’ve been meaning to try making overnight oats for what seems like forever, and I am SO glad I finally did. These oats are delicious, creamy, and thick, and an incredibly satisfying breakfast for the morning rush, or a lazy day. The dates and pecans add a caramel and nut flavour and texture, which compliments everything else wonderfully. I also added some fresh raspberries and blueberries on top when I ate mine.

The concept of overnight oats has always been appealing to me, but for some reason I never tried them for myself before now. After doing some research on how to make these as tasty as possible, I decided to veganize the “base recipe” from wholefully.com with some minor tweaks, and add some dates and pecans into the mix. Breakfast this morning was so quick, convenient, and yummy, I know I’ll be making these much more often from now on.

This recipe is seriously super easy and quick. Just place all your ingredients in a medium bowl (or straight into your mason jar to save time/dishes!) and stir.

Jar it up, close the jar, and place in the fridge for a minimum of 4 hours. Overnight is best for that nice creamy consistency. Enjoy the next morning straight from the jar, or in a bowl with some more of your favourite toppings. I added fresh blueberries and raspberries to mine!

Ingredients
  • 1/2 cup Rolled Oats
  • 1/3 cup Vegan Yogurt (I used Silk original)
  • 2/3 cup Soy Milk
  • 1 tbsp Chia Seeds
  • 1/4 cup Dates, chopped
  • 1/4 cup Pecans, chopped
  • 1/2 tsp Vanilla
  • 2 tsp Maple Syrup
Directions
  • Step 1 Combine all ingredients in a medium sized bowl, and carefully scoop into a 500ml/pint sized mason jar.
  • Step 2 Close the lid, and place in fridge for at least 4 hours, ideally overnight.
  • Step 3 Enjoy as is, or with any extra toppings you want!
