Easy Oatmeal Chocolate Chip Cookies

Soft and sweet, with just the right amount of chew, these Oatmeal Chocolate Chip Cookies will satisfy your sugar cravings with whole ingredients that your body actually wants and needs! Not only are they filled with fibre, iron, and other great nutrients from the oatmeal, these cookies are bomb-tastic and super delicious. I actually ate most of these as breakfasts throughout the week when on the go, but they also make an excellent snack, dessert, etc.

And the best part? Aside from being extremely yummy, satisfying, and healthy, these cookies are so simple to make, and will last for a week or more in an airtight container in the cupboard, so you can grab them and go whenever you need!

Easy Oatmeal Chocolate Chip Cookies

Preheat oven to 350°F. In a large mixing bowl, beat together vegan margarine and both sugars until light and fluffy. Add in flour, baking soda, salt, cinnamon, egg replacer, and vanilla. For my egg replacer, I mixed together 1 tbsp corn starch and 3 tbsp water in a small bowl until there were no lumps remaining, and added it to the recipe. Once everything is combined, fold in rolled oats and chocolate chips.

Scoop out rounded tablespoons of dough onto a parchment lined cookie sheet, and carefully flatten with a spatula or the palm of your hand just a little. Bake for 8-9 minutes, and allow to cool before serving. Cookies should still be very soft when they come out of the oven, and solidify as they cool.

  • 1/2 cup Vegan Margarine
  • 1/2 cup Brown Sugar
  • 1/4 cup Sugar
  • 1 cup All-Purpose Flour
  • 1/2 tsp Baking Soda
  • 1/8 tsp Salt
  • 1/2 tsp Cinnamon
  • 1 Egg Replacer (I used 1 tbsp Corn Starch mixed with 3 tbsp Water)
  • 1 tsp Vanilla
  • 1 1/4 cup Rolled Oats
  • 1/2-3/4 cup Vegan Chocolate Chips
Directions
  • Step 1 Preheat oven to 350°F. In a large mixing bowl, beat together vegan margarine and both sugars until light and fluffy. Add in flour, baking soda, salt, cinnamon, egg replacer, and vanilla and mix until thoroughly combined.
  • Step 2 Fold in oats and chocolate chips, and scoop out rounded tablespoons onto a parchment lined cookie sheet.
  • Step 3 Carefully flatten cookies just slightly with a spatula or your hands, and bake for 8-9 minutes. They should still be very soft when they first come out of the oven.
  • Step 4 Allow to cool before enjoying, and place the rest in a sealed container in the cupboard.
