Happy St. Patricks Day y’all! I hope you’re all wearing green, so you don’t get pinched!
I’m a little late to the party with this recipe, but better late than never, am I right? So here we are.
In all honesty, I totally forgot it was St. Paddy’s Day today until I opened up Instagram and saw the hoards of green recipes flooding across my homepage. As soon as I realized why, I knew I had to make something on theme and delicious as well. What kind of food blogger would I be if I didn’t find a way to turn every holiday into a recipe?!
I decided to try adding a few tablespoons of matcha into one of my favourite sugar cookie recipes, and they came out amazing if I do say so myself. These cookies are sweet, matcha-ey, and just the right combination of chewy and crunchy. I’m hooked already!
Not only were these cookies insanely delicious, they were super easy to make!
Just add the butter, flour, and sugar to a large bowl, and mix them together evenly. Then add matcha and vanilla and stir one more time.
Scoop out tablespoon sized cookies onto a parchment lined baking sheet (I use an ice cream scoop for nice, even cookies). Press down with a fork, and bake at 350° F for 10-15 minutes, or until cookies are still soft, but just beginning to brown on the bottom. Allow to cool before eating!
Vanilla Matcha Sugar Cookies
Vanilla Matcha Sugar Cookies are the perfect green treat to celebrate St. Patrick's Day this year, or to satisfy your green tea cravings any day!
- 1 cup Vegan Butter or Coconut Oil
- 1 and 1/2 cups All-Purpose Flour
- 1/2 cup Powdered Sugar
- 1-3 tbsp Matcha Powder
- 1 tsp Vanilla
- Step 1 Preheat oven to 350° F.
- Step 2 Combine butter, flour, and sugar in a large bowl.
- Step 3 Add matcha powder and vanilla, and mix until evenly combined.
- Step 4 Bake 10-12 minutes, or until cookies are still soft, but just beginning to brown on the bottom.
- Step 5 Allow to cool on tray, serve, and enjoy!
