Vegan Blueberry Buttermilk Pancakes

These pancakes are light and fluffy on the inside, slightly crispy on the outside, and super tasty all around, with delicious pockets of blueberry goodness that melt in your mouth. They are the perfect way to treat yourself and fill your stomach at the same time, with an amazing breakfast!

I’ve always loved pancakes. To be honest with you, I’ve never met anyone who didn’t, but I’ve also never met anybody who loves them quite as much as my husband does. Creating the perfect, golden brown edge is a point of pride for him, and he’s been perfecting his recipe ever since we went vegan almost two years ago. The end result has been by far some of the best pancakes I’ve ever eaten, and I give full credit to my incredible husband for finding all the secrets to making them extra yummy.

These pancakes are delicious with simply butter and syrup on top, or with any kinds of fruits, nut butters, vegan yogurts, etc. I’ll show you what I covered mine with below!

Vegan Blueberry Buttermilk Pancakes

Mix together almond milk and apple cider vinegar and set aside to create your buttermilk. In the meanwhile, combine all dry ingredients besides blueberries in a large bowl.

Now slowly mix in the milk mixture, along with vanilla and melted coconut oil. Once combined, fold in fresh or frozen blueberries until your batter looks like it was tie dyed purple (this might only happen with frozen blueberries, so if using fresh ones, just mix them in).

Heat up your frying pan on medium heat or just above, and once vegan butter or coconut oil begins to sizzle, scoop out 1/4 cup of batter for each pancake and pour into your pan. Space pancakes evenly, and fit as many as you can without squishing them, depending on the size of your frying pan.

When most of the bubbles on top of the wet side of the pancake have popped, and outside edges begin to look cooked, carefully flip pancakes and cook on the other side for another minute or two. The other side should be golden brown as well.

Serve and enjoy with your favourite toppings! I covered my stack with melted peanut butter, Silk unsweetened vanilla coconut yogurt, vegan chocolate chips, sliced banana, and fresh blackberries (the only blueberries I had were frozen).

Ingredients
  • 2 cups All-Purpose Flour
  • 1 tbsp Sugar
  • 1/2 tsp Salt
  • 1 heaping tbsp Baking Powder
  • 2 cups Almond Milk
  • 1 tbsp Apple Cider Vinegar
  • 2 tsp Vanilla
  • 1 tbsp Coconut Oil, melted
  • 1/2 cup Blueberries (fresh or frozen)
  • Vegan Margarine or Coconut Oil for frying
Directions
  • Step 1 Mix together almond milk and apple cider vinegar and set aside to create your buttermilk.
  • Step 2 Combine flour, sugar, salt, and baking powder in a large bowl. Slowly whisk in milk mixture, vanilla, and melted coconut oil until evenly combined and any lumps have been mixed in. Add blueberries and stir gently.
  • Step 3 Heat up your frying pan on medium-high heat. After a minute, add 2 tbsp of vegan margarine or coconut oil to the pan. Once it begins to sizzle, turn the heat down slightly and pour 1/4 cup of pancake batter into the centre.
  • Step 4 Allow pancakes to cook until almost all bubbles on the top have popped, flip, and cook for another minute.
  • Step 5 You may need to adjust the heat as you’re cooking. If your pancakes are browning too quickly, turn down the stove, or if they are not golden brown yet when flipped, turn it up.
  • Step 6 Serve with your favourite toppings and enjoy!
